Ingredients
  

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 3 cups broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 2 tablespoons water (for steaming broccoli)

Method
 

  1. In a small bowl, whisk together the soy sauce, honey, minced garlic, apple cider vinegar, cornstarch, and 1/4 cup water until smooth. Set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 5–6 minutes, turning occasionally, until browned and fully cooked. Transfer the chicken to a plate.
  3. Add the broccoli florets and 2 tablespoons of water to the same skillet. Cover and steam for about 3 minutes until tender-crisp.
  4. Return the cooked chicken to the skillet. Pour the prepared honey garlic sauce over the chicken and broccoli. Stir continuously for 1–2 minutes until the sauce thickens and coats everything evenly.
  5. Serve immediately over steamed rice, noodles, or your favorite side dish.

Notes

For a spicy version, add 1/2 teaspoon crushed red pepper flakes.
Use tamari instead of soy sauce for a gluten-free option.
If the sauce becomes too thick, stir in 1 tablespoon of warm water.
